Josh loves his peanut butter. If he could eat one thing for the rest of his life it would be peanut butter. So, it’s no surprise to anyone that his favorite kind of cookies are peanut butter cookies. MY peanut butter cookies, to be exact. I make these babies so often that we’ve started buying peanut butter chips in bulk, that’s sad.
I agree that these cookies are good, but not my favorite. They’re too peanut butter-y. But for some, I guess that’s a good thing.
Peanut Butter Cookies
1 1/2 sticks unsalted butter, softened
2/3 + 1/4 cup peanut butter
2/3 cup brown sugar, firmly packed
2/3 cup sugar
2 large eggs
1 tsp vanilla extract
3/4 tsp baking soda
2 1/2 tsp salt
1 3/4 cups all purpose flour
1 1/4 cups peanut butter chips
Preheat the oven to 350F and line two baking sheets with parchment or silpat liners.
Sift together the flour, salt and baking soda; set aside.
Cream together the butter, peanut butter and sugars. Add the eggs one at a time.
Add vanilla. Slowly add flour mixture and beat until combined. Stir in peanut butter chips.
Using an ice cream scoop, dish out cookies; 6 per tray. (I usually have to reuse one of my baking trays.)
Bake each tray for 17 minutes. Makes about 18 cookies.
